The new and improved chocolate
We all know that dark chocolate is healthier for you than milk chocolate. Many people prefer the taste of milk chocolate though. Dark has a more bitter taste while milk has a sweeter taste, due to the amount of bitter cocoa powder in them. Scientists just recently learned how to make milk chocolate have the same health benefits without compromising the taste.
This doesn’t mean that you should go and eat lots of chocolate though thinking it will make you healthy, because it has very high fat and sugar contents. Antioxidants are found in nuts, fruits, vegetables, and (you guessed it) dark chocolate. Hence the name, antioxidants stops the process of oxidation. Too much oxidation can cause damage to the cells, cancer, and heart disease.
The scientists can not simply “milk” (excuse the pun) the antioxidants out of the dark chocolate and put it in the milk chocolate without affecting the taste. Scientists did find that peanut skin extracts have plenty of antioxidants and mixed it with a powder called maltodextrin to mask the bitter antioxidant taste. They actually were looking for a way to get rid of the peanut skins because they always end up buried as wastes in landfills after the peanuts are used to make peanut butter.
